Pour cette première résidence, À chacun sa madeleine et Mr.&Mr. ont joué la carte du momentané pour des soirées partagées avec les invités. Momentané comme éphémère et comme moment donc, celui de la restitution d’une collaboration, à l’image d’une exposition ou d’un spectacle. C’est ce à quoi on s’engage à vivre lorsqu’on réserve au Restaurant d’application. Scénographié et designé par Mr.&Mr., le menu est composé du temps présent par les cuisiniers laborantins, produits locaux obligent. Designers et cuisiniers interagissent dans un même processus créatif. Le temps de l’élaboration est le temps de la recherche collaborative. Celui du repas est celui de la performance. Le Restaurant d’application est en fait ce précieux instant du travail en atelier et de l’orchestration, de la rencontre et du plat mijoté pour mieux s’éloigner du cérémonial des restaurants « encartés ».
Le Restaurant d’application’s goal is to make you consider your dinner as a performance. This test kitchen, which caters specifically to cooks and designers, is the place for all attempts at formal and culinary reinventions of meals. For the first residency, À chacun sa madeleine and Mr. & Mr. have put the emphasis on the momentary nature of dinner parties shared with guests. This re-establishment of collaboration, which resembles an exhibition or a show, is therefore as fleeting as Ephemera or as brief as a moment. This is what you will expect to experience once you make a reservation at Le Restaurant d’application. Organized and designed by Mr. & Mr., the menu is composed of contemporary food items prepared by cooks in training who make good use of local produce. Designers and cooks are both involved in the same creative process. The time of creation is the moment for collaborative research. Meal time means show time. Le Restaurant d’application offers, in fact, a great opportunity for individuals to participate collaboratively and harmoniously in a workshop setting. It is the ideal place as well to meet up with others in an atmosphere where meals simmer, in order to better distance oneself from the formality of restaurants with an à la carte menu.
